Hello, I'm Amy from The Copper Table

Hello Everyone! I have been a member of this forum for a little while now, and realized that I had not posted an introduction!

I’m Amy, and my blog is The Copper Table. I focus on approachable from scratch recipes that use minimal processed ingredients, with an emphasis on fresh produce and making the most of CSA box items and Farmers Market finds.

I have been blogging off and on since 2019, and in the last year or so I have been trying really hard to be more “on” than “off” hahaha.

A fun fact about me is that I have three children spaced very far apart in age. My oldest is 26, my middle child is 20, and my youngest is in Kindergarten. So I was in fact changing diapers while paying for college (which was a contributor in my “blogging off and on” problem). One more fun fact is that I also live on a small island in the Pacific Northwest!

I can’t wait to get to know everyone!

Yay - hi Amy! Glad you posted an introduction and so happy to have you here! Also yay for another PNW person

Hi Amy! So happy you’re here. Do you know David from @CookingChat ? He has a podcast about fresh produce and making the most of CSA boxes. I’m wondering if he might be looking for guests!

Love your fun fact. The broad range of ages has to keep you on your toes! Hope you find value here in the forum.

It definitely keeps me on my toes for sure! Its funny you mention @CookingChat, I was interviewed by David this past Summer for Episode 11! It was fun to be a part of his podcast, and I would love to do it again sometime!

There is such great information all over the forum, and so great to fins so much in one place

Hi Amy! Also from the PNW! Love the focus of your blog.

Hi Amy! Welcome to the forum. As someone that has also blogged “on and off” for many years due to one thing or another, I can’t recommend the forum and Megan’s podcast enough. It’s a huge source of information and motivation too.

Nice to meet you Amy! I also heavily focus on fresh produce and I’m at farmer’s markets all the time. It would be great to have you on my podcast as well. Mine is called Eat Shop Waste Not.

Thank you Kristin! The PNW is really a special place. So many great ingredients to work with right at our doorstep!
